When chef Alex Atala opened the DOM restaurant in 1999, he had a purpose: to develop a bold and original cuisine that would exalt the richness of Brazilian socio-biodiversity using native ingredients still little known outside their native regions: jambu, tucupi, açaí, priprioca, bacuri, among many others. DOM was the first establishment to receive two Michelin stars when the guide arrived here in 2015 – a distinction it maintains to this day, thanks to the consistency of Atala and his team's work and the tireless research into authentic Brazilian flavors, worked with technique, creativity and irreverence, as is the case with the iconic Amazonian ant, which has become omnipresent in the tasting menus.
